What is included in a catering setup?+

Typically the food, warming equipment, serving utensils and the table layout, with crew where the package says so. The differences between packages tend to sit in the equipment and the staffing rather than the dishes. Each listing spells out what arrives and what stays.

How long does setting up a buffet take?+

Longer than most people allow for. Crew need time before service to lay out and bring everything up to heat, then time afterwards to clear and collect equipment. Agree both windows with your venue separately from the serving time.

How many serving lines do I need?+

One line moves a room slowly once you are past a hundred or so guests. Ask the vendor how many lines they will run for your headcount and roughly how long a full service takes, then check that fits the slot the venue gives you.
